Our Story
Our company, Mani in Pasta (English translation: “hands in the dough”), was created in order to offer the highest quality made-to-order fresh pasta available in Southern California. Our pastas are made using Nonna Marisa’s recipes, which have been passed down from generation to generation for more than 70 years. Chef partner Antonio Giordano’s grandmother Marisa learned the timeless art of making pasta by hand from her grandmother Amalia, and it’s these same techniques that we use in order to make make our fresh pastas every morning, made to order.
Our pastas are super premium due to the high quality ingredients that we use as well as customization options. Spinach ravioli stuffed with burrata? No problem. Gluten free or vegan fettuccini? Of course. Your customers have been requesting a type of pasta you can’t get your hands on? We’re all ears. We are a kitchen’s kitchen, meaning that we can be your culinary partner for both your pasta dishes for your restaurant as well as your fresh pasta retail.

Quality & Process
We use 100% Italian raw materials which are carefully selected in order to yield the highest quality end-product. Our stuffed pastas are made by hand, and our traditional cuts are made using bronze drawing techniques, followed by a long and delicate low temperature drying time. Everything is important here: flavor, color, texture and presentation.
